3 Ingredient Peanut Butter Cookies


You Read Right. Three.

These cookies are as easy as 1, 2, 3.

Oh yeah, I went there.

Honestly though, I'm not lying.

I had a go-to peanut butter cookie recipe for years, and then my pal Pearl, of bookclub/champagne lady renown said 'I can do you one better. My recipe only has 3 ingredients.'

"Oh yeah?", I said.

"Yeah", she said.

Who am I to argue.

It's going to take you ages to assemble the ingredients so just be prepared. Can you hear the sarcasm?


Just about now, you're questioning whether I've been hanging out with Hoda and Kathy Lee and enjoying a little Wednesday Wine Day. Rest assured, I haven't. {Honestly, they're on a drinking break for another 22 days, give or take a day}.

That's it for this recipe. It's one for the books, or the index card. 

Sugar, egg, peanut butter.

I know. You love this recipe already, right?


Pearl's 3 Ingredient Peanut Butter Cookies
preheat oven to 350F
makes 20 or so small peanut butter cookies

1 cup granulated sugar
1 cup of peanut butter (I'm a chunky pb gal, but if creamy is your thing....by all means)
1 large egg

Mix all three ingredients until smooth.  Drop by spoon onto ungreased cookie sheet. Bake for 8-9 minutes. Don't make them too big, these are chewy cookies and if you make them too big, they'll break when you pick them up. Press with fork when there are two minutes left on the clock.  Remove from oven and let rest on cookie sheet for 5-10 minutes. This is important. Be warned, if you don't,  they'll just break, even if you made them small, because they're 'chewy' cookies. After that, you can move to cookie rack if you like, if there are any left to finish resting/setting.

Cross my heart and call it a day. You are done.

I mixed mine in my Kitchen Aid stand mixer. That makes even lighter work of an already pretty darn easy job.





Yes people. I have the ugliest cookies sheets known to man. They still do the job though. (Of course, if there are any cookies sheet manufacturers or Silpat companies out there....yoohoo, Martha.... who think I should be ashamed to show this cookie sheet to God Only Knows Who, please contact me for my mailing address. I'm sure your product would take my cookies up a notch and I'd be more than happy to prove that fact and let my readers know all about it.  While I'm at it, I've never quite warmed up to my oven, just sayin', since I'm sharing my ugly cookie sheet and all.)  


When there are a couple of minutes to go before they come out of the oven, lightly press down with fork tines to make mandatory peanut butter cookie fork marks.

Snow Day

Remember how I told you on Monday that it was freakishly warm? You know, 61 degrees F. In New Hampshire. In January.

Today we woke up to a lovely little snow fall.


Looking out the side door to the East at my neighbor's barn.

I declare it Pretty with a capital P.

Out the back door?



Same thing only different. Pretty with a capital P.

And then this.


Dufus McSnownose. With a capital D.

Now, I bet you have all three of those cookie ingredients on hand (another great thing about that recipe). Get baking.

By the way...........just wait until you see how I upped the ante on the peanut butter cookie recipe tomorrow. Oh my, my, my, my. That's all I'm going to say.

      I have a very similar recipe that I ran across a year or so ago which I tried for my step-daughter who is gluten intolerant. Best cookies ever! I will never go back to the old recipes again.

      We might have cracked 55 degrees here in San Diego. We've been quite cold here the last week or so! Your snow does look lovely, though!

    1. Well, I can't say we've had much. A few storms that have made it pretty. Biggest was about 7 inches of snow.......I'm always hoping for over a foot. Call me crazy. The bigger the snow storm the better.

      it's still snowing and it's reall sticky stuff. there should be no shortage of snowmen tomorrow.
