5 Ingredients To Heaven


Taking Peanut Butter Cookies Up a Notch

Who made yesterday's peanut butter cookies already, raise your hand (um, Ashley?).

OK, OK. That might be pushing it, but you've gotta admit, three ingredients that you probably have in the house calls for pulling out the baking sheet.

When I made the peanut butter cookies I thought to myself, "I have chocolate chips in the pantry. I bet that would taste good. Hey, I have coconut too. I wonder how that would taste." 



Let me simply say......YUM.

 


So here we go........since it's my friend Pearl's peanut butter cookie recipe, with my new twist, let me introduce to you Pearl & Pam's 5 Ingredients To Heaven Cookies. Bonus: they're gluten free. Unless chocolate and coconut have gluten that I don't know about.

5 Ingredients To Heaven Cookies
preheat oven to 350F
makes 20 or so small cookies
1 cup granulated sugar
1 cup of peanut butter (I'm a chunky pb gal, but if creamy is your thing....by all means)
1 large egg
1 cup semi sweet chocolate chips
1/2 cup coconut flakes
Mix first three ingredients together until smooth.  Then gently mix in chocolate chips and coconut.  Drop by spoon onto ungreased cookie sheet.  Squish them them together a bit so they hold together  nicely. Bake for 8-9 minutes. Don't make them too big, these are chewy cookies and if you make them too big, they'll break when you pick them up. Press with fork when there are two minutes left on the clock.  Remove from oven and let rest on cookie sheet for 5-10 minutes. This is important. Be warned, if you don't,  they'll just break, even if you made them small, because they're 'chewy' cookies. After that, you can move to cookie rack if you like, if there are any left to finish resting/setting.
 
 
 Yup. Same ugly cookie sheet as yesterday. Heavens to Murgatroid.
 
However, if those ugly cookies sheets keep producing cookies like these...........I can ignore the fact that they're ugly.


I'm so glad I went with my gut and tried a batch of the peanut butter cookies with a couple extra ingredients thrown in for good measure.

Winter Whites
 
The snow kept at it all day yesterday. It thankfully never changed to rain. It was sticky to be sure, which made for a beautiful landscape yesterday afternoon and even more so this morning.
 
Doesn't this look like angel wings?
 

This morning, the sun was bright and the sky was blue.



It was hitting off the snow and sparkling, giving everything a whole new dimension.

  1. wow! those cookies sound amazing! I love chocolate and coconut! And I have been craving something sweet all day. I don't have any chocolate or coconut right now, so I will just have to make yesterday's recipe. This recipe looks so easy! On my way to the kitchen now! Thanx! Oh, and by the way, don't feel bad about your cookie sheets. Mine look the same way!

  3. I am soooo trying these! I love simple, easy recipes like this one. I love crunchy pb, though hubby prefers creamy, but we both love coconut in our cookies! Thanks!

  5. I see you have Bob's Red Mill products! Their factory/HDQs is right here in my town! I have friends who work there! I also make aprons for Bob's gift shop! great products! Oh, and your cookies are good too! :)
