One of Our Favorites
We're admittedly seafood nuts. We just love it....all of it.....anyway we can get it.
Mussels are one our go-to classics.
If you like 'em or love 'em, you just can't go wrong. They're pretty inexpensive here....$4 for a 2lb bag, which with a loaf of bread, is all we need for a meal.
Last night we did them with white wine and crumbled bleu cheese. It just doesn't get any easier to make a gourmet meal (and they do taste gourmet). As if the mussels themselves aren't good enough, the liquid heaven that you sop up with your bread just puts it over the top.
Drooling yet Di? Yup, my sister Dianne loves them as much as we do.
Mussels in White Wine & Bleu Cheese
serves 2-3 people depending on how much they love mussels & how hungry they are
2 lbs of Mussels (rinsed to remove any dirt/sand)
*(these were farm raised PEI Mussels, so there weren't any beards to fuss over...if there are, this is what you do)
2 tbs of butter
2 cloves minced garlic
1/3 cup of water
1/2 cup of dry white wine
1/3 cup bleu cheese (crumbles or diced)
In large saucepan melt butter and add garlic. On medium heat, add mussels followed by water and wine. Let it come to simmer. Cover for 5-8 minutes. Top with bleu cheese with about a minute to go. Serve with crusty bread.
What did I tell you? Easy, right? There is nothing to be afraid of here folks. Unless of course you're my father who used to thoroughly enjoy mussels until out of nowhere, he became quite allergic. I pray this never happens to me.
I am happy to say, Gar bought two bags so we will be having mussels again tonight. (Did you hear that Di?)

ReplyDeleteyou'd have to try awful hard to make mussels bad......i mean all you need is a little butter, garlic, white wine and are good go!
