From The Muse Kitchen: Stuffed Mushrooms

Yes, Please

Any other mushroom lovers out there?  They are one of my absolute favorites. They are always on the grocery list. They're a given.

In consideration of this fact, stuffed mushrooms are on of my go-to appetizers for gatherings.  Last week, I made them for my night out with the bookclub/champagne ladies. 

Now, it's hard to hold me down to one recipe. I don't even really 'have a recipe' because it's the kind of thing you can wing every time, using whatever you might have on hand, but there are a few things that I do like to put in them if I've got them: scallions and carrots for color, garlic for flavor, and non-fat yogurt to keep them moist.

Dry doesn't make for a very good stuffed mushroom. At least not in my book. I hate it when all the stuffing is falling apart when you're trying to eat them.

This time, I made them gluten free, which really is no big deal.  If you want to go the super easy route, just use an all veg stuffing- if you still want something to replace breadcrumbs you can use gluten free corn crumbs, or gluten free bread broken up and crumbled.  For this recipe though, I went with brown rice.

They were delicious.  Of course, as I said, I am rather partial to them though.



'This Time Around' Stuffed Mushrooms

2  8oz packages or 1  16 oz package of button  mushrooms
(with mostly medium to large mushrooms in package)

stems from mushrooms, chopped

1 medium carrot, chopped very small
(I do this with a knife so they are still a bit rough, but it can be done with a food processor)

4 scallions chopped small (including the greens for color)

1 cup of cooked brown rice (cooked according to directions, but using 2 1/4 cup of vegetable broth instead of water)

3- 4 oz of diced feta cheese

2 cloves of garlic, pressed or diced very small

1 tsp of fresh or dried rosemary
  

2 cloves of garlic, pressed or diced very small

1 tbs of melted butter

2 - 3 tbs of non-fat yogurt

preheat oven 350F

Clean mushrooms with a dry kitchen towel or paper towel, brushing away any dirt and gently breaking off stems.  Do not wash as it will make them soggy.  Set mushrooms aside. Cook rice in vegetable broth and set aside. Chop mushroom stems, carrots and scallions and place in mixing bowl. Add pressed garlic, rosemary, melted butter, yogurt and cooked rice.  Mix well.  Add feta and mix again.  Using teaspoon, press into cavity of each mushroom and place on baking sheet or in roasting pan with sides to keep them from moving around when putting in oven.  Place in oven and bake at 350F for 25-35 minutes.  Let cool 3 minutes, transfer to serving dish and serve hot.

 

As I said, I made these with what I happened to have on hand.  You can use whatever vegetable you have whether it's peppers, onions, or celery, etc. You can also change out the rosemary for a different herb or spice. Stuffed mushroom are as versatile as you want them to be.

Snowed In

The snow is now literally over the top. We got even more snow starting yesterday afternoon into night.  We were supposed to get maybe 4 inches.

Try 12.

It was dumping for a few hours at about 2 inches an hour.  Dumping is what we call it around here, when the heavens open up and all you can see is snow.

So I thought I'd give you a peek at why cabin fever is starting to get the best of us in these parts.


In case you don't recognize them, that's our pool to the left, my patio table (which never made it to the basement) in the center, and our grill to the right.

Yeah. I know. We haven't been grilling too much this winter.


This is our cozy cottage looking west from one side of our driveway, after I finally dug the car out and moved it so our neighborfriend Tom could push some snow with his tractor.  That was after I had to climb through the passenger side of the car to push the driver's side door open because it was frozen shut.  The snow keeps coming so quick - storm upon storm, that we haven't even had time to rake the roof.



Thank God for neighborhoodlum Tom and his tractor. Truly. Thank you. This is out our side door this morning. I still haven't shoveled a path to the door yet. Poor Tom is starting to have a hard time lifting the snow any higher than it already is.



Tom plowed a path for Lucan, but he can't really go anywhere else at the moment.  The snow in the yard is up mid thigh on me, (and I know because I had to make my way through it this morning) so it's just too high for the old boy to climb through. Even Lucan looks like he has had enough.


Looking across to Tom and Joanie's pine trees toward sunset meadows.  That's how high the road embankments are at the moment.


Looking back across the street at our cozy cottage...................well, sort of.....since you can barely see it.



Our weathermen are getting ready to go on their own comedy tour.  They gently broke the news to us that we may get a couple more inches this evening.

We'll have to see about that.

Take A Walk With Us: After The Storm

Winter keeps rolling on and so do the storms. This past Thursday a good sized storm came through and lasted into Friday.  By the time all was said and done, we had about 12 more inches of snow and a fresh coat of freezing rain that glistened over everything.

The sunsets on these stormy days have been so, so pretty.

Despite the freezing cold, I took to Sunset Meadows with my camera in tow.

 



 


Just as we got cleaned up from that storm, another came in on Saturday and dropped several inches of more snow. This time, wet and sticky............


............making for a winter wonderland of sorts.

I was hoping to get pictures yesterday of all the trees covered in snow, but the wind picked up and blew everything off by morning.

And so it goes.

This week, as always, lots of design projects on my plate - revision rounds on some projects as well as new designs.  I worked on some over the weekend as well to get a head start on the white board list (did I tell you about the white board yet? G bought it for me and I have to say it is working out rather well so far).  I'll also be starting to pull together plans for the next muse online magazine, so be sure to stay tuned. I hope to have even more great content and readership this time around, after such a fantastically positive response to the inaugural issue.  Once again there will be advertising opportunities, which I hope give my sponsors, the chance to reach new people.

What Inspires You Wednesday

Snow In Winter



There is something quite magical about how the landscape can change in the matter of hours in the Winter.  Yesterday, sunny blue skies and a field nearly bare of its Winter coat.  Today, snow falling fast, yet sofly. The world muffled and silent except for the sound of fine snow hitting what has already been laid on the ground.



It's quite peaceful.

There is something to take away from it, especially on a very busy day.  

Stop. 

Breathe.

Be mindful of what you are working on at that moment.

Keep your thoughts quiet so you can give full attention to what lays before you.

Today is a phone and design day here in the office/studio. Talking to clients, reviewing creative briefs, going over design changes, etc.  Oh, and waiting for the snow to arrive. I'm hoping it's as pretty as the last.

Take A Walk With Us: A Most Beautiful Snowfall

The Weathermen Missed This One

Who knew we were supposed to get a measurable snowfall on Saturday? Not I. Not the weathermen either.  They didn't see this one coming at all.

It started out with big honkin' flakes. I'm talking huge.  The kind that usually only last for about 15 minutes before changing to smaller, finer snow. Well, Saturday's snow had something else in mind. The huge flakes continued coming down for about 4 hours and never really changed.  It was also  wet, which if you live anywhere you get snow, means it sticks. It sticks to everything. Every branch of every tree and then some, making for the most glorious of winter wonderlands.

I headed over to the the sunset meadows field with camera in tow, in the midst of the snow. It was quiet. The world was silently muffled by snow. 




By the time it was all said and done we had 7 inches or so (give or take an inch).  I think the forecast had called for a trace dusting, if even that.  I, for one, was glad they were wrong.  This snow was exactly what I love about winter. There was no denying the beauty.

The next day everything was covered in a fresh coat of white.  Absolutely breathtaking.




I hope that your weekend was just as beautiful.

White Christmas?

Perhaps..........

On top of the storm we got over the weekend that I told you about yesterday, another quick one blew through yesterday starting late afternoon. By dark it really started coming down.

This morning..........hhhhmmmm.......I'd say we have another 6 or so inches on top of the 12 we got from the last one.

Have I told you lately that I love a fresh blanket of white?  I really do. If it's going to be winter (almost), it might as well snow. Otherwise, what the heck are we doing living here. We could be on an island somewhere.  Of course,that's my take on things from my cozy home office......I'm sure those that have to drive to work could do without it.

The bitter cold we had, is a little more temperate today. I thought it was just too cold for snow yesterday but it warmed up, just enough.

There is snow out the side door, to the east.


There is snow out the back door, to the north.


There is snow out the front window, to the south.


And there is snow out the front door, to the west.


I don't think there will be any sunset meadows viewings from my Adirondack chair for awhile.

Then again, this is New England and I could be completely wrong.

They're predicting close to 50F by Friday. Seriously?

It better not melt all of this and make an ugly mess for Christmas.  That would be a bummer.

Beyond the snow, things are moving at breakneck-speed here, between what I'm working on for my design clients, the first edition of the muse magazine being proofed for publication by my helpers as-we-speak, getting ready for Christmas and New Year's.........it's a busy, busy, busy time.  I'll be looking forward to a couple of down days over the holidays.

Take A Walk With Us

A Really Quick One.................

First things first: Saturday night we got our first real snowfall of the season (we've had an inch or two and some flurries on and off). We were hunkered down watching the snow fall during White Christmas, and outside the scene was mimicked. 12 inches of sparkling, pretty white stuff. It's a beautiful, winter wonderland. We're supposed to get more this afternoon and tonight.

Here's the second thing: the temperatures did a serious nose dive. It was a balmy 0 (F) this morning.
So you see.....................


It's also very white outside.





At the very least, it's beginning to look a lot like Christmas, but today is so cold that when you open the door for one second, you shut it just as quick.  And that's how these pictures were taken.......

I imagine it's going to warm up a bit this morning and afternoon, otherwise the snow just wouldn't happen. Too cold.

So for now, the dog and I are holding down the fort with the wood stove going. And that's how it shall remain for the day.
